The Chef and His Philosophy

The kitchen is led by Shingo Kanda, an owner-chef who holds a rare distinction. He is an Austrian State-Certified Küchenmeister (Culinary Master), officially recognized as a successor of Austrian food culture. His cooking is described as robust, drawing out the full essence of its ingredients. This is not fussy, overthought food; it is confident, substantial, and direct. The restaurant's philosophy, shaped by Japan's changing seasons, speaks of growing together with the cycles of nature, like the sturdy flowers that color each season.

A House Divided into Two

The establishment operates under two distinct identities. HABSBURG is the restaurant side, where Kanda’s hearty cuisine is the star. VEILCHEN – the German word for violet – is dedicated to patisserie. The name is a tribute to Empress Elisabeth, who loved violet flowers and their candied sweets. Here, the delicate, traditional Viennese pastries (Mehlspeisen) take center stage. The menu includes classic desserts like Kaiserschmarrn, Palatschinken, and Salzburger Nockerln, all offered in a counter-dining setting or private rooms.

This dedication to authenticity earned GINZA HABSBURG VEILCHEN a Michelin Recommended nod in 2026.
