A Ginza Hideaway Devoted to Dashi

On a quiet street in Ginza, Ginza Toyoda has quietly earned its place among Tokyo's most respected tables. The restaurant has been listed in the Michelin Guide Tokyo every year since 2008—a sustained recognition that speaks to its unwavering focus on the fundamentals of Japanese cuisine.

The philosophy here is simple and rigorous: serve only a seasonal omakase course built around an extraordinary dashi. The chef personally selects every ingredient, but the soul of the cooking lies in the stock. Ginza Toyoda uses aged natural Rishiri kombu and carefully prepared dried bonito flakes, adjusting the blend of katsuobushi cuts and kombu varieties depending on the season and the dish. For simmered dishes, they turn to true kombu for deeper flavor; for soups, they alter the extraction temperature. Nothing extraneous is added. The result is a dashi that changes daily, tuned to the weather and the ingredients it will accompany.

The setting is a sukiya-style space—clean-lined, spare, and calming—with views over the Ginza Namiki-dori. The restaurant seats just 23 guests, all at counter or table service, making each meal feel personal. It is a place for both celebratory occasions and quiet weekday lunches, where the cooking itself is the center of attention.
