A Quiet Sushi Counter in Hakozakicho

Tucked underground on a side street in Tokyo’s Hakozakicho neighborhood, Hakozakicho Sumito is a sushi restaurant that feels deliberately removed from the bustle of nearby Nihombashi and Ningyocho. The space is calm, with warm wood and a broad counter that invites lingering. Chef Kurokawa Kiyoto, who spent over twenty years training at respected shops including “Tsukiji Sushi Iwa,” Ginza’s “Sushi Shintaro,” and Yokohama’ “Nakajo,” opened this counter in 2023. His aim: to offer a place where guests can relax without formality, enjoying sushi that reflects his own standards.

The Omakase and Its Foundations

The dinner course (from ¥27,500) and a sushi-only course (from ¥22,000) change with the seasons. Chef Kurokawa sources his ingredients directly from Toyosu Market each morning, relying on trusted suppliers such as Yamayuki for tuna. The rice comes from a contract farm and is blended with a house vinegar. Temperature is adjusted according to the neta – the topping – and its fat content. The result is a series of pieces that feel precise yet unhurried.

Sake is a focus here: a carefully selected lineup is meant to pair with the sushi and the small dishes that precede it. The tableware and sake cups are pieces the chef collected during his training, adding a personal note to the meal.

A Michelin-Recommended Address

Hakozakicho Sumito has been recognized in the Michelin Guide Tokyo 2026 with a Recommended distinction. It is a quiet, confident addition to Tokyo’s Japanese fine-dining scene, suited for anniversaries, business dinners, or a deliberate evening away from the city’s pace. Lunch is available by prior reservation.
