The story

Hijirizaka Wakei Tokyo – Japanese Kaiseki with Tradition and Modernity

A Philosophy of Harmony and Innovation

At Hijirizaka Wakei in Tokyo’s Mita district, the guiding principle is wa-kei-sei-jaku—harmony, respect, purity, and tranquility. The kitchen describes its approach as “95% tradition and 5% innovation,” a balance that respects the deep roots of Japanese cuisine while allowing room for personal expression. The result is a meal that feels both timeless and distinctly individual.

The Omakase Experience

The restaurant offers a seasonal omakase course, with prices varying by the time of year—¥33,000 from March to August and ¥39,600 from September to February. The menu changes with the seasons, drawing on carefully selected ingredients and traditional Japanese techniques. Each dish is presented as a single, fleeting moment: “a moment of emotion that transcends words, captured in a single plate.” Guests sit at a 10-seat counter or in one private room, and the meal begins promptly at 18:00, a reflection of the chef’s precise, respectful approach to timing.

The Space: Sukiya Architecture Reimagined

The restaurant’s interior is a modern take on sukiya architecture, the style used in traditional tea houses. Natural wood and meticulous craftsmanship create a space that is both elegant and welcoming. The design balances the simplicity and grace of a tea room with the functional needs of a contemporary dining space. It is an environment meant to put guests at ease, allowing the focus to remain on the food and the moment.
