The story
In Tokyo's quiet Motoazabu district, Chef Ippei Adachi brings a focused vision of Cantonese cuisine to life at Ippei Hanten. After graduating from culinary school, Adachi spent years honing his craft in Cantonese kitchens across Japan, then traveled to Hong Kong for two and a half years. There, he immersed himself in the city's food culture—from high-end restaurants to street stalls—mastering the techniques of roasting and dim sum. Returning to Tokyo, he expanded his repertoire with Sichuan cooking before opening his own restaurant in 2022.
Adachi distills his experience into a refined course of Cantonese cooking that respects tradition while incorporating seasonal Japanese ingredients. The kitchen emphasizes the authentic aromas, flavors, and techniques of Cantonese cuisine, presenting them in a polished, multi-course format. Each dish reflects the depth of his training and the precision required for high-level Chinese cooking.
Ippei Hanten offers an intimate setting with eight counter seats and three private rooms, each seating four guests (two rooms can be combined for up to eight). The counter provides a direct view of the kitchen's work.
