The story

Kabukizaura Masashi – Intimate Counter Dining in Ginza, Tokyo

A Quiet Stage in Ginza

On a sidestreet in Tokyo’s Ginza district, Kabukizaura Masashi offers an experience built around a single, eight-seat hinoki counter. The name itself hints at the restaurant’s focus: “kabuki” references the traditional theatre, “zaura” suggests the chef’s position at the cutting board, and “Masashi” is the given name of the chef-owner.

Chef Masashi learned his craft in Ginza before opening his own space in 2023. The restaurant is air-conditioned and entirely counter-focused – every guest has a front-row view of the chef at work. The interior is kept deliberately simple, letting the cooking and the ingredients speak.

Japanese Cuisine, One Course at a Time

The menu is built around seasonal Japanese ingredients, served as an omakase course. There are no a-la-carte options; the chef decides the sequence based on what is best that day. The cooking is precise and restrained – a clear broth with local clams, a slice of lightly torched swordfish, a bowl of rice with sea urchin from Hokkaido. Each course arrives with a brief explanation, often revealing the source of the ingredient or the technique used to prepare it.

The restaurant’s Michelin recommendation for 2026 notes the quiet professionalism of the team and the clarity of the flavours. This recognition places Kabukizaura Masashi among a select group of Ginza addresses where the focus is on the ingredient, not the garnish.

For the Curious Diner

Dinner here is unhurried, typically lasting two to three hours. The counter seats eight, so reservations are essential. The atmosphere is hushed but not stiff; regulars and first-timers alike are treated with the same attentive calm. It is Japanese cuisine at its most elemental: raw, grilled, steamed, simmered – each course a small argument for why simplicity, done well, is enough.
