In the basement of a Shibuya building, Katsuo Shokudo is a morning-to-early-afternoon restaurant dedicated to one ingredient: katsuobushi, the dried, smoked bonito flakes that underpin much of Japanese cooking. Chef-owner Mai Nagamatsu calls herself a “katsuobushi evangelist,” and the restaurant is her daily demonstration of why that title fits.

The story begins with her grandmother, who shaved katsuobushi by hand a decade ago and told Nagamatsu it was an essential part of Japanese food culture. That lesson stuck. Nagamatsu began touring producers, experiencing the full process of making katsuobushi, and visiting the craftsmen who build the shaving machines. “I want to connect this deliciousness to the future,” she writes. “Katsuobushi is my life.”

At Katsuo Shokudo, that philosophy is served at the counter. The menu focuses on Japanese breakfast and lunch, with the katsuobushi shaved to order. The space is small and direct—counter dining where you watch the work happen. The Michelin Bib Gourmand listing recognizes the quality and value of this cooking, a nod to the fact that such craft can still be found at an accessible price point.

Nagamatsu has also written a book titled Katsuobushi o Teshigure Suru: Oishii Kurashi Nihon no Aji Itadakimasu, sharing her love for the ingredient and the traditional flavors she works to preserve. It’s a natural extension of the restaurant’s mission.

Katsuo Shokudo opens at 8:30 and closes at 13:30, closed on Wednesdays and Thursdays. It is a place built around a single, deeply respected ingredient, served by someone who has made it her life’s work.
