KIBUN, meaning “mood” or “feeling” in Japanese, is built around the concept of itokodori – taking the best parts from multiple traditions and combining them into something new. The restaurant describes its style as “Ultra Cuisine,” a term emerging in global gastronomy that transcends standard food genre boundaries. This approach is not a cooking technique but a general term that means “to take only the best parts and to combine the merits of several things,” as the restaurant explains. It is a genealogy of contemporary Japanese cooking that respects seasonality while pushing beyond convention.

Located on the second floor of a building in Nishi-Azabu, KIBUN is an exclusive 13-seat restaurant offering counter dining. In the 2026 Michelin guide for Tokyo, it was awarded one star, a recognition of its high-quality cooking and singular vision. The nine-course seasonal menu is priced at ¥22,000 (plus service and tax), reflecting the precision and care that earned the star. The atmosphere is quiet and focused – a space designed for guests to witness the kitchen’s work directly and to experience the progression of flavors that define the Ultra Cuisine philosophy.

After-Dinner Wine and More

The restaurant’s wine list is curated by SLIPPERSPOON, which also operates a small bar in the same space that opens after dinner service at 21:00. Guests can continue the evening with fine wines and a select menu of home-baked breads, cheese, and daily choices – a natural extension of the dinner experience. The restaurant’s own nod to the importance of wine is reflected in a line on its homepage: “A meal without wine is called breakfast.”
