The story
La Paix means "peace" in French, and that spirit permeates every corner of chef Ippei Matsumoto's restaurant. Intentionally small, it is designed so that the team's attention and care reaches every guest directly. The cuisine is a thoughtful fusion of classical French techniques and modern lightness, rooted in the finest ingredients sourced from across Japan. The seasons are honored not as decoration but as the foundation of the menu.
"I want to create French cuisine that is unmistakably Japanese, full of seasonal feeling," the chef says. His philosophy is built on five pillars: Japan, harmony, heart, connection, and the five senses. Every plate aims to surprise, to delight, and to express the beauty of the moment.
Matsumoto was born in Wakayama in 1974 and grew up surrounded by his family's oden eatery. After culinary school, he worked in Nara before moving to Tokyo's Roppongi district to join the French restaurant Vincent. There he moved from front of house to the kitchen, mastering pastry and sauce work. In 2000 he traveled to Namur, Belgium, to work at the Michelin-starred L'Essentiel. Returning to Japan in 2002, he spent a decade as head chef at Au Goût du Jour Merveille in Nihonbashi. In 2014 he opened La Paix. The restaurant earned a Michelin star in 2018—a recognition that continues today—for its high-quality cooking and serene dining experience.
Lunch and dinner are both chef's choice course meals. Lunch begins with a six-dish option at ¥9,350, while dinner courses start at ¥17,600. The kitchen works with ingredients at their peak, preserving them in optimal condition. Diners can expect a procession of dishes that balance tradition with playful touches. The restaurant's commitment to harmony extends to the beverage pairing and attentive service, all delivered in a tranquil setting near the Nihonbashi bridge.
