L'AFFINAGE

In the heart of Ginza, L'AFFINAGE is a French restaurant that takes its name seriously. The word "l'affinage" means "aging" or "maturation," and it captures the philosophy behind everything chef Yasuyuki Takara does. He wants his cooking, his service, and his own growth to deepen over the next ten, twenty years—like a fine cheese or a well-cellared wine. The restaurant is a place where the chef, his team, and their guests all mature together, relationship by relationship.

Chef Takara’s path to opening his own restaurant was a long one. After starting his career at the Hotel Metropolitan, he spent two years in France in 1989, working in Paris and the Savoie region. Back in Japan, he became sous-chef at Akasaka's Le Maestro Paul Bocuse Tokyo, then head chef at Hibiya's Nanteitei. In 2002, he took the helm at Brasserie Lecrin, and later became executive chef at Ginza Lecrin. In October 2018, he opened his own place, Restaurant L'AFFINAGE, on the fifth floor of a Ginza building.

The menu is a fixed course, available at lunch and dinner. Lunch offers appetizers, two starters, a fish course, a meat course, dessert, petit fours, and coffee. Dinner adds a third starter, a pre-dessert, and a grand dessert. Wine and carefully selected tea pairings are available for both. The cooking is precise, classical French, built on the kind of technique that only comes from decades in the kitchen.

L'AFFINAGE earned a Michelin star for its high-quality cooking, a recognition that fits naturally with the restaurant's quiet, serious ambition. The dining room is air-conditioned, with counter seating that lets you watch the kitchen at work. The dress code is smart casual—no shorts or sandals for men. Children are welcome at lunch in the private room (ages six and up), and at dinner for high school students and older.

This is a restaurant for those who appreciate patience, technique, and the quiet power of food that has been given time to become itself.
