The story
In Tokyo’s Kasumigaseki district, L'ARGENT presents a vision of modern French cuisine shaped by an exceptional international career. Chef Junichi Kato, who opened the restaurant in 2020, brings a rare depth of experience to the kitchen. After training at the Tsuji Culinary Institute in Lyon, he worked in Paris at the three-Michelin-starred Astrance, where he was one of only three Japanese chefs ever assigned to the meat station. He then moved to Copenhagen at the height of the New Nordic cuisine movement, working at two-starred AOC and Marchal. This unique path—French technique refined through a Nordic lens—defines the cooking at L'ARGENT.
The restaurant’s concept is rooted in both excellence and responsibility. Chef Kato’s dishes are based on classical French cuisine but incorporate novel ingredients and elegant presentations informed by his time in Scandinavia.
