A Story of Harmony

L’aube, a French word meaning dawn or beginning, perfectly captures the spirit of this Roppongi restaurant. The name was chosen to reflect the creation of beauty that exists only in a single moment – the delicate harmony between what nature provides and what human hands craft. Since opening in 2016, the team has worked to weave together the food cultures of Japan and France, letting them resonate with each other to produce new flavors and pleasures.

The Table

Chef Hideaki Imahashi leads the kitchen, drawing on the seasons and the dedication of producers. The menu changes with the market, offering dishes that speak clearly of their ingredients. A recent lunch course might begin with skipjack tuna and beetroot, move to green asparagus with scallops, and continue with sweetfish and mushrooms, before arriving at Hokkaido ENIWA ROSSO pork with peas. The dinner options expand further, with courses like turbot and citrus, seabass with asparagus, and Hokkaido lamb. A special 10th-anniversary menu, Menu Concerto, was created to showcase the delicate work of pastry chef Hirase, offering a deeper exploration of his desserts.

The restaurant is a Michelin Recommended address, a recognition that aligns with its quiet pursuit of excellence. The dining room seats 24, with a private room for eight, and the atmosphere is one of understated comfort – a place where the focus remains squarely on the plate.

A Decade of Care

In 2026, L'aube celebrated ten years. Looking back, chef Imahashi spoke of the trials overcome and the joys shared with guests, staff, and the producers who supply exceptional ingredients. The philosophy from the beginning – to bring happiness through the restaurant business and contribute to society – remains the guiding principle.
