Le temps moelleux – a French omakase in Tokyo’s Akasaka

Tucked on the basement floor of a residential building in Akasaka, Le temps moelleux (“melting time”) lives up to its name. The white, clean-lined interior is deliberately casual – no stiff formality, just a place to relax and let the meal unfold. The restaurant’s single offering is a monthly omakase course, designed so guests can focus on conversation and the food.

Chef Izumi Tanaka trained for five years at the Yokohama restaurant “修廣樹,” then refined her skills at a Michelin-starred restaurant and in Paris bistros. She opened Le temps moelleux in September 2018, fulfilling a childhood dream. Her cooking is ingredient-driven, sourcing seasonal produce from contract farmers and game meats from France and beyond. The kitchen wastes nothing: even bones, blood, and offal find their way into the dishes.

Standout plates include “秋刀魚とフォアグラ、山椒、マンゴー” – saury paired with foie gras, finished with sansho pepper and mango, the acidity and spice balancing the richness. Another signature is the roast Landes pigeon, served with a traditional blood sauce accented with cacao. The dessert “桃づくし—オリエンタルの香り—” uses peach in every part – flesh, seed, skin – and comes with a crackling cotton-candy sheet.

Wine is taken seriously. Sommelier advisor Kotaro Hayama, a respected figure in Japan’s wine scene, curates the list with a focus on French natural wines. His presence at the restaurant on select evenings allows for spontaneous pairings. The monthly changing menu also includes a weekend lunch option.

The restaurant’s careful, personal approach recently earned it a Michelin Recommended distinction for 2026. In a city full of high-end French dining, Le temps moelleux offers a quietly confident alternative – one where the meal is left to the chef, and the only task is to enjoy the time.
