A True Bouchon in Tokyo

In the historic, cobblestoned alleys of Kagurazaka, Chef Christophe Paucod has created something rare: the first authentic Lyonnais bouchon in Japan run by a Lyonnais. Opened in September 2007, Lugdunum Bouchon Lyonnais is a heartfelt tribute to his hometown, translating the convivial spirit of a traditional Lyonnais eatery to the heart of Tokyo. The restaurant has earned a place in the Michelin guide, a recognition that speaks to its genuine execution of this classic French cuisine.

The Man Behind the Stove

Chef Paucod’s journey is a classic French culinary story. Born in Vénissieux near Lyon, he began his apprenticeship at 15 in Rouen under two-Michelin-starred Chef Gilles Tournadre at Restaurant Gill. He then honed his craft in the brigades of Parisian legends, including La Tour d’Argent and the Plaza Athénée. After moving to Japan in 1998 to teach at Le Cordon Bleu, he eventually became executive chef for the Accor Group. But the pull of his roots was strong. At 33, he decided to bring the soul of Lyon to Tokyo, creating Lugdunum.

Atmosphere and Spirit

The name Lugdunum is the ancient Roman name for Lyon, and the restaurant’s interior is a carefully curated homage to the city’s heritage. Chef Paucod has furnished the space with genuine antiques from the Lyon region: an early 20th-century wrought-iron spiral staircase, a traditional wood-and-pewter bar counter, original Émile Gallé Art Deco lighting, and solid oak tables. The walls feature landscapes of Lyon and original 19th-century Lyonnaise china. It’s an environment designed to recreate the warm, friendly atmosphere of the bouchons he grew up with, offering a setting that feels both refined and genuinely welcoming. The restaurant offers a tasting menu for lunch and dinner, with seasonal specials and occasional “Chef Friends” dinners where guest chefs collaborate on an exclusive six-hands menu.
