Mutsukari, a Japanese fine-dining restaurant on the sixth floor of a Ginza building, offers an experience rooted in the traditions of kaiseki while placing an uncommon emphasis on vegetables. Awarded a Michelin star in the 2024 Tokyo guide, the restaurant draws on chef-owner Yoshihisa Akiyama’s deep training in shojin ryori (Buddhist vegetarian cuisine) and classical Japanese cooking.

The Chef behind the Kitchen

Born in Ibaraki in 1974, Akiyama began his career at Kappo Suzuki before spending formative years at Gesshin-kyo, a celebrated shojin ryori temple restaurant. There he learned the discipline of working with vegetables—a skill that would define his style. In 2008, Akiyama became head chef of Mutsukari in Ginza, and in 2024 the restaurant earned its first Michelin star. The same year, it ranked third in Japan and 25th globally on the World’s Best Vegetable Restaurant list. Beyond the kitchen, Akiyama has served as director for international culinary symposiums and created lunch menus for JR East’s luxury cruise train, TRAIN SUITE Shiki-shima. In 2023, he was appointed a Tokyo Tourism Ambassador.

A Vegetable‑Centered Japanese Cuisine

While Mutsukari offers several courses, the restaurant’s standout is its vegetable-focused offerings. The “菜根耽” (Saikondan) course is limited to one party per day and uses 30 to 50 types of vegetables, prepared and plated by the chef himself on curated antique and contemporary ceramics. This is not a strict vegan menu—dairy, eggs, and bonito dashi may appear—but the vegetables are the star.

The seasonal course menus, such as the “Chef’s Recommended Course” or the “Kiwanami Course,” follow the kaiseki structure: appetizers, soup, sashimi, grilled fish, a vegetable dish, meat, rice, and dessert. Each course changes monthly, reflecting what is fresh. The restaurant’s attention to produce extends from the vegetable selection to the classic yet refined technique evident in dishes like grilled sweetfish and simmered seasonal greens.

Dining in Ginza

Mutsukari occupies a refined space in Ginza, with counter seating, private rooms on the sixth floor, and a special eighth‑floor room for larger groups (four to eight guests). The atmosphere is calm and focused, designed to let the food speak. Dinner service runs from 17:30 to 23:00, with last entry at 20:00.

This is Japanese cooking that honours the ingredient—especially the vegetable—without sacrificing depth or tradition. Akiyama’s years of training and his dedication to vegetables give Mutsukari a distinct voice in Tokyo’s fine-dining landscape, one that has earned recognition well beyond the capital.
