Myojaku: Tokyo's Three-Michelin-Star Japanese Omakase in Nishiazabu

In the basement of a quiet Nishiazabu building, Myojaku is a sanctuary of precise Japanese cuisine. Chef Hidetoshi Nakamura leads a small team that treats each ingredient with reverence.

“Receiving the many ingredients delivered from Edo Tokyo and all over Japan, we work with each ingredient daily, cooking with all our heart so that each one is in its proper form,” Nakamura writes. This philosophy shapes every course. His omakase centers on seasonal vegetables, but also draws from the mountains, rivers, and sea. The goal is to let diners feel the soil, wind, and water through the food.

The space is intimate. A main counter seats eight, with a smaller six-seat counter and two private rooms. The mood is calm and focused—no perfume, no strong scents. Smart casual dress is requested. The tasting menu is the only option, and the chef adjusts it for allergies when notified in advance. From April 2026, the price will be 49,500 yen, a reflection of the ingredient costs and the craftsmanship of the producers who supply them.

The precision and purity of this approach earned Myojaku three Michelin stars in 2026, placing it among Tokyo’s finest. It is a restaurant where the seasons dictate the menu, and the chef’s respect for each element is palpable.
