A Name with Meaning

Nabeno-Ism is more than a restaurant name. It combines "Nabeno," taken from Chef Yuichiro Watanabe's nickname "Nabe chef," with "Ism," signifying a philosophy or school of thought. The name also carries a hidden homage: remove the first "N" and you get "Abeno-Ism," a reference to the Abeno district of Osaka, home to the Tsuji Culinary Institute founded by his mentor, Shizuo Tsuji. Tsuji is buried in Asakusa, grounding the restaurant in a deep sense of place and tradition.

Chef and Cuisine

Chef Watanabe trained under the legacy of French culinary education in Japan. At Nabeno-Ism, he applies his conviction to traditional French cuisine, evolving it in harmony with the local character of Asakusa's Komagata neighborhood.
