On a quiet street in Tokyo’s Nishi-Azabu district, Nishiazabu Taku occupies a ground-floor space in the Kaparua building, a five-minute walk from Nogizaka Station. The interior is built around three counters: a main counter with eight seats, a private counter for six, and a separate counter for six. The wood-lined room is warm and intimate, with a crisp yet approachable atmosphere. Guests can watch the chefs at work and enjoy conversation, making the experience feel both personal and refined.

The Omakase Course

The restaurant offers a single omakase course. Each day, the chefs select the finest seasonal ingredients arriving from fishing ports across Japan. The meal alternates between tsumami (appetizers) and nigiri sushi, prepared with techniques chosen to match the condition of each fish. Red and white vinegars are used selectively according to the characteristics of the fish, bringing out their rich umami. The simple yet profound flavors are further enhanced by the dynamic flow of the dishes, revealing new expressions in harmony with wine and sake.

Seasonal Focus
