Piao-Xiang: The Living Tradition of Sichuan in Tokyo

"Red and spicy" is how most diners picture Sichuan cuisine. At Piao-Xiang in Tokyo’s Hiroo district, the reality is far more kaleidoscopic. Here, chef-owner Yoshiki Igeta presents the "hundred flavors, hundred dishes" of classical Sichuan, a world away from the simplified versions often found abroad. His dedication to the true depth of this Chinese cuisine earned it a Michelin star.

Piao-Xiang is the story of a Japanese chef who fell so deeply for the cuisine of Sichuan that he crossed the sea to master it. Igeta began cooking as a child, but his life changed when he tasted a proper twice-cooked pork. After years of training in Japan under masters of the craft, he moved to China—first Shanghai, then Chengdu, the spiritual home of Sichuan. There, he immersed himself in the region's "24 flavor profiles" and "56 cooking techniques," learning not just recipes but the very mechanism of the cuisine.

His quest reached its peak in 2018, when he was accepted into the prestigious Songyun Menpai school in Chengdu, becoming one of only a handful of Japanese disciples to be recognized as a true inheritor of their traditional methods. This lineage is the soul of Piao-Xiang. The restaurant’s name itself was inspired by a sign Igeta saw at a bus stop in Sichuan, evoking the drifting fragrance of bamboo in the wind—a scent he pursued deep into the bamboo sea of southern Sichuan.

The Michelin star, awarded for high-quality cooking, validates Igeta’s singular vision. Diners at the Hiroo flagship experience a single, meticulously crafted course that begins at 6:30 pm, designed for full focus on the food. The menu is a dialogue between ancient technique and a chef's personal evolution. Igeta uses Japanese ingredients with integrity—no chemical seasonings, no shortcuts—and adapts, for example, seafood to a landlocked province’s cuisine with respect rather than force.

The restaurant itself is a quiet, elegant space, one of several locations (alongside Ginza and Roppongi) that Igeta runs, each with a distinct personality. Eating at Piao-Xiang is an education in contrasts: the numbing spark of Sichuan pepper, the deep savor of house-made fermented pastes, and the delicate sweetness of a pristine Japanese vegetable. It is a deep, authentic, and complex expression of Sichuan cuisine, painstakingly recreated three thousand miles from home.
