The story
In the quiet Passage Aoyama in Minami Aoyama, Tokyo, Ristorante ACQUA PAZZA has been serving Italian cuisine since 1990. The name, meaning “crazy water,” refers to the dramatic Southern Italian fisherman’s dish where fish is simmered in seawater, olive oil, and tomatoes. Owner-chef Yoshimi Hidaka first encountered this technique while training in Italy, and it became the foundation of his cooking.
The restaurant’s approach is rooted in simplicity and respect for ingredients. Over the years, Hidaka adapted the classic dish to suit Japanese tastes, and it remains his lifelong specialty. At ACQUA PAZZA, the kitchen team works with seasonal produce from organic farms in Soka, Italian vegetables from Yamagata, and fresh seafood delivered daily from Chiba’s Suzuiichi Fisheries. The menu changes with the seasons, and the quality of the ingredients is the priority.
The dining room is bright and open, with sunlight streaming through the windows. Venetian glass chandeliers and handcrafted Italian glassware add warmth. A private room for up to twenty guests is available for gatherings. The restaurant also offers a carefully selected wine list, and the team includes experienced sommeliers who guide pairings.
ACQUA PAZZA has received a Michelin Recommended award, a recognition that reflects the consistency and care in the kitchen.
