Owner-chef Tetsuya Honda is known for a style that lets the ingredients speak, often described as "like Japanese cuisine" for its purity and seasonal focus. The restaurant has held a Michelin star since 2009, a testament to its consistent excellence.

The Philosophy: Japan First

The core of the cooking at Ristorante HONDA is a deep commitment to domestic produce. "Japanese ingredients are best," Chef Honda believes. He works directly with producers across the country, sourcing the finest seasonal ingredients and selecting the best region for each product as the seasons change. The result is Italian cooking that feels deeply rooted in the Japanese landscape, with dishes that highlight the natural umami and texture of each component.

The Experience

The setting is refined and adult, perfect for a special occasion or a quiet, meaningful meal. The menu offers a choice of degustation courses, including the "HONDA Speciale" (27,500 yen) and the "DEGUSTAZIONE" (22,000 yen). A standout is the pasta course, which guests say is unlike anything else in Tokyo. The wine list is extensive, with around 200 labels primarily from Italy, plus selections from Burgundy and Champagne, including some premium vintages.

What to Expect

Expect a meal that is both elegant and surprising. A recent multi-course dinner might start with a sweetfish mille-feuille, followed by an oyster sorbet with caviar, a kinmedai (golden eye snapper) cured in kelp, and a hamo (pike conger) fritter with matsutake mushroom. A signature course is the cold beetroot capellini with caviar and white shrimp. The meal concludes with a series of delicate desserts, such as a mont blanc with Kyoto chestnuts and a hazelnut financier. It is a cuisine that celebrates the seasons of Japan through the lens of Italy.
