Here, chefs schooled in Kyoto kaiseki prepare dishes that reflect both tradition and the day's freshest ingredients. The menu is a list of individual items, inviting guests to build their own meal according to taste – the hallmark of the kappo style.

The dining room revolves around a 15-seat counter of fragrant hinoki wood. From this perch, guests watch as chefs grill ingredients over charcoal, a live performance that makes every dish feel immediate and personal. The pleasure of eating food just off the heat is a defining part of the experience.

Every night, the chefs tailor each plate to the preferences of the diner, using only ingredients sourced that day.
