On a quiet street in Tokyo’s Minami-Azabu, seven minutes on foot from Hiroo Station, Seisoka operates with the unhurried confidence of a kitchen that knows its craft. The restaurant is the work of Sanae Nagasaka and Yoshihiko Ueda, who together shape an experience rooted in the rhythms of the Japanese table.

The interior is built around a counter—a setting that puts the preparation front and centre. Air conditioning tempers Tokyo’s heat and humidity, keeping the focus on the food. The cooking is Japanese, precise and seasonal, drawing from what the moment offers. The spring-to-summer transition, for instance, brings a shift in ingredients and sensibility, and the kitchen responds accordingly.

Seisoka holds one Michelin star, a mark of high-quality cooking that aligns with what regulars already know: the cooking is assured, the technique quiet, the flavours clear. Nothing here calls attention to itself unnecessarily. That restraint is the point.
