The story
The chef, Toshinori Nakamura, trained in Michelin-starred kitchens in Tokyo and studied home-style cooking in Hong Kong. His path wound through Yokohama Chinatown, the Mandarin Oriental Tokyo’s “Sense,” and the celebrated “Ginza Chuka Takase” before he opened his own space in July 2021. That experience informs every dish: the precision of high-end Cantonese technique, tempered by the warmth of Hong Kong family recipes.
The guiding concept is kappo-style Chinese – a Japanese approach to omakase dining applied to Cantonese cuisine. Lunch and dinner are both omakase courses, with the dinner offering 11 to 13 dishes. The kitchen uses seasonal ingredients from a contract farm in Okayama, charcoal for grilling, and a carefully curated selection of Shaoxing wine, craft beer, and Chinese teas that the chef sources directly from Hong Kong.
The signature dish is “浸蒸鶏” (steamed chicken), a Hong Kong home-style preparation that appears on most menus. Other highlights include a fish white soup with seasonal fish and homemade rice crackers, abalone steamed with Shaoxing wine and liver sauce, and a slow-steamed soup with Jinhua ham, dried scallop, shark fin, and cordyceps. The dinner course, fully reserved in advance, is priced at ¥18,500 (tax and service charge separate).
Shunka Nakamura received the Michelin Recommended distinction in 2026, a recognition that aligns with its careful sourcing, technical precision, and the intimate, unhurried pace of the meal. The restaurant is a rare place where the Chinese cuisine tradition is filtered through a Japanese sense of season and hospitality – without losing its soul.
