High above Nihonbashi, on the 37th floor of the Mandarin Oriental Tokyo, SIGNATURE offers a refined take on French cuisine. The restaurant, recognised in the Michelin guide, is a destination for diners who appreciate classical technique expressed with contemporary clarity.
The kitchen is led by Chef Sylvain, a Parisian who began his career at fifteen. His early training took place at Le Jules Verne, the Michelin-starred restaurant within the Eiffel Tower, followed by stints at Alain Ducasse’s Benoit and other Parisian kitchens. He moved to Japan in 2010, honing his craft at SIGNATURE before becoming head chef in 2023. His cooking draws on the classic foundations of French cuisine—the traditions, the techniques, the reverence for terroir—and adds a modern sensibility suited to Tokyo.
The dining room itself is sleek and contemporary, with shimmering silver partitions that create a sense of intimacy while the city skyline stretches out beyond the windows. It is elegant without being stiff, a space that complements the food rather than competing with it.
The menu changes with the seasons, offering lunch and dinner courses built around French culinary principles. A three-course business lunch is available on weekdays, designed for efficiency without sacrificing quality. The dinner service includes both set menus and à la carte options. A thoughtfully curated wine list and wine pairings are available to match the meal.
For private occasions, a dedicated dining room seats up to eight guests, and a semi-private area with panoramic views accommodates up to fourteen. The dress code is casual elegance—jackets or collared shirts for men, no baseball caps or beach sandals.
