The name, French for "simplicity," is not a description of technique but a guiding principle. For owner-chef Kaoru Aihara, simplicity is both the starting point and the final destination of deliciousness.
Chef Aihara’s path is rooted in rigorous classical training. After beginning his career in Kanagawa, he refined his craft in France at Michelin-starred restaurants, including a two-star stint in Geneva. Returning to Japan, he held senior positions at esteemed Tokyo establishments before opening his own restaurant in Daikanyama in December 2017.
The cuisine at Simplicité is distinctly French, yet its heart beats with the rhythm of Japan’s seas. Chef Aihara believes that cooking is a practice of listening to ingredients and drawing out their potential. His signature approach involves aging carefully selected seafood from across Japan, deepening umami and concentrating flavor in a way that is uniquely possible here.
The result is a "symphony of flavors on a plate." Aihara’s intuitive, ingredient-led cooking is presented in omakase-style courses. Lunch unfolds over seven to eight dishes, while dinner extends to eleven to thirteen, each plate an exploration of texture and depth. This dedication to craft has earned the restaurant a Michelin recommendation, a recognition of its sincere, uncompromising kitchen.
The space itself mirrors the cuisine. A long, sweeping chef’s counter of warm wood curves against modern marble walls, offering a front-row seat to the chef’s precise movements. A curved glass wine cellar displays a curated selection of bottles, chosen to complement the subtle power of the seafood.
For more private occasions, a table seat is available, adaptable to a private room. The atmosphere is one of refined calm, where the focus remains squarely on the plate and the story it tells.
