In a quiet corner of Toranomon, Tokyo, Sorahana offers Japanese cuisine built on a sincere dedication to the season. The restaurant draws ingredients from across Japan, with a particular focus on the bounty of Sagami Bay. Each dish is handled with restraint, letting the inherent character of the produce speak quietly yet profoundly.

The chef, a Miyazaki native, began her career as a nutritionist before training for roughly seven years at the three-Michelin-starred Nihonryori Kanda. She later served as head chef at Ginza’s Akomeya Kitchen before opening Sorahana in Kamakura in 2016. The restaurant moved to its current Toranomon location in 2020 and earned a Michelin star the following year.

The kaiseki courses reflect this precision. Dashi is adjusted for each soup bowl, the hassun platter subtly conveys the season, and dessert offers a choice of two from a selection of four. The meal concludes with matcha from the celebrated Rishouen Chaho in Uji. The dining room seats just twelve at a counter and at tables, defined by the warm grain of Japanese ash and traditional Kyo-kabe plaster walls—a space meant for unhurried conversation.

Sorahana’s Michelin star recognizes the high quality of this cooking. The restaurant’s approach is gentle and direct: seasonal ingredients, careful technique, and a setting that supports the food without distraction.
