The story
Sugaya brings a disciplined approach to Japanese cuisine in the Azabu district of Tokyo, where Chef Takayuki Sugaya opened his counter on December 7, 2018. He spent twenty-two years training since age fifteen to develop a strict standard that refuses to compromise on technique. The kitchen prioritizes the vinegar rice above all else, crafting a shari that clings smoothly to seasoned fish without masking the original flavor. Every movement reflects that long apprenticeship.
Guests follow a structured progression that begins with four or five small tasting plates before transitioning to roughly ten pieces of nigiri. The chef applies precise knife work and careful temperature control to highlight the natural texture of the seafood. This deliberate pacing allows diners to appreciate how disciplined preparation shapes each bite.
The dining room maintains a calm, uncluttered layout that directs full attention toward the preparation area. This measured atmosphere aligns with the restaurant’s recent Gault&Millau rating, which acknowledges how consistently the team delivers polished Japanese cooking. Patrons leave with a clear understanding of how restraint and accuracy shape the entire meal.
