The story
Sushi Marufuku is a Tokyo sushi-ya driven by what its chef calls "an unrelenting spirit of inquiry and passion for umami." Located in Suginami Ward, the restaurant quietly earned a place in the 2024 Michelin Guide's Selected Restaurants list, a testament to its meticulous, evolved approach to Edomae tradition.
The philosophy here centers on jukusei – aging. After sourcing the finest seasonal fish from across Japan, the chef applies careful preparation and then ages each piece for one to four full weeks. The result is a concentration of natural umami that fresher fish cannot achieve, turning each bite into an intensely savory, textural experience.
The offering is a single omakase course, priced at ¥23,500 (tax included). The menu weaves together a series of appetizers (tsumami) and nigiri, all designed to be paired with sake, beer, wine, or champagne selected by the restaurant's kikizakeshi (sake sommelier). The dining space, centered on a counter seat, allows guests to watch the precise, unhurried work of the chef.
