The story
Tokihami, a small izakaya tucked away on the second floor of a Ginza building, offers a refined take on the classic Japanese pub. The restaurant opened in April 2019 under owner-chef Junya Kudo, who trained at the Michelin-starred Ginza Uchiyama before earning the right to open his own place. At Tokihami, the spirit of the izakaya meets a carefully curated wine program—the restaurant describes itself as a "Japanese cuisine & wine" establishment.
With just ten seats—five at a counter and two tables for two and three—the atmosphere is intimate and calm. The interior is stylish and subdued, designed for focused conversation. Diners sit close to the open kitchen, watching the chef at work. The restaurant is a true hidden spot, and the location reinforces the sense of discovery.
The menu is à la carte, a departure from the typical omakase format. Seasonal ingredients are handled with precision, and the kitchen emphasizes fish dishes. The approach is creative yet grounded in tradition. A recent review praised a "goutou rice" with salmon roe, bottarga, sea urchin, and caviar—a decadent combination that reflects the kitchen's playful side. The wine list is given special attention, with a sommelier on staff to guide pairings.
Tokihami has been listed in the Michelin Guide Tokyo with a Recommended rating for 2026, and it has appeared on Tabelog's "100 Best Japanese Restaurants" list for 2023 and 2025. These honors reflect the care and consistency of the experience.
