The story
In Japanese, “hinata” means a sunny spot, and the restaurant’s ethos is about creating a comfortable, welcoming circle of people. To preserve that intimacy, dining at Yakitori Hinata is by introduction only – a policy that keeps the atmosphere calm and personal. The restaurant values the “wa” (circle) of guests, and reservations are strongly encouraged.
Each skewer is prepared with care, though the restaurant’s own website focuses not on specific dishes but on the drink pairings. A dedicated drink list rotates through the seasons, offering a wide range of sake such as Kishin junmai daiginjo and Kokuryu “Ryu” daiginjo, plus shochu (Mugi Hyakunen no Kodoku, Imo Manzen), and a selection of Champagne and Burgundy wines, including Ruinart Blanc de Blancs and Dom Pérignon. Non-alcoholic options like Queen of Blue oolong tea and grape juice are also available. The drinks are chosen to complement the yakitori, enhancing the charcoal-grilled flavours.
The interior is designed for counter dining, allowing direct interaction with the cooking, and the space is air-conditioned for comfort. Lunch and dinner are served, with a private party option available. Takeaway is also offered.
At Yakitori Hinata, the focus is on quality ingredients, thoughtful service, and a drink list that changes with the seasons – all in a setting that feels like a well-kept secret in Tokyo’s Minato ward.
