The chef and his craft

Kenji Ooi returned to his hometown of Tsukuba to launch Ristorante TSUMU, a destination known for innovative Italian cooking. His early training span Michelin recognized kitchens in Tuscany and Lombardy before he moved to Kobe to work alongside Chef Fukumoto at Kasento. Subsequent roles at Courages Magome and ahill azabu refined his technique across multiple traditions. The restaurant’s name references a wooden spindle, mirroring his intent to spin regional narratives into every plated dish.

A seasonal tasting framework

The kitchen serves the Ibaraki Terroir Course, a progression of seven to eight dishes designed around weekly market arrivals. Fixed pricing at fifteen thousand yen removes guesswork while allowing the team to prioritize peak ripeness over rigid Italian kitchen routines. Pairing options range from sparkling wine and local sake to dedicated non-alcoholic selections crafted specifically for the course. Because the venue operates on a strict reservation system, each preparation receives focused attention during service.

The dining room and reception

Eight chairs occupy the ground floor of the Tsukuba International Conference Center, creating an intimate setting that favors direct interaction. Large windows frame the adjacent parking area while the interior maintains a practical, unadorned layout. This quiet efficiency caught the attention of Gault&Millau, which awarded the kitchen a score of fifteen for its consistent execution. Guests arrive without formal dress codes, stepping directly from the public concourse into a room where the Italian cuisine takes center stage.
