Head Chef Shinpei Matsumoto took over the pass in August 2022 after years of rigorous training abroad and in western Japan. His path began at École Cuisinier Osaka and continued through their French campus before he apprenticed under Chef Teijima for four years. Matsumoto now executes Yoshino’s vision while maintaining the daily rhythm that keeps service precise. The dining room enforces a smart casual dress code and welcomes guests aged twelve and older.
Guests choose between three structured courses that run from eight thousand to twenty thousand yen. The tasting progression moves through a daily soup, two seasonal starters, a choice of fish or meat, and concludes with coffee paired with small sweets.
