The Philosophy

The name Chuan Ya captures the restaurant’s dual ambition. Chuan, meaning river, references the deep culinary traditions of Sichuan province, from imperial court feasts to home-style cooking. Ya, meaning elegance, speaks to the meticulous plating and delicate sensory experience that define the dining here. The guiding principle is “Sichuan cuisine, served with elegance.”

The Cuisine

Chuan Ya draws inspiration from classic Chengdu-style Sichuan cuisine while embracing the best of Taiwan’s seasonal ingredients. The kitchen merges the artistry of Western fine dining presentation with the unmistakable wok hei of Chinese banquet dishes. The result is a menu that celebrates Sichuan’s legendary 24 flavors, proving that the cuisine is far more than just spice. As the restaurant’s philosophy states: “Each dish has its own style; a hundred dishes have a hundred different flavors.”

The cooking follows the lineage of master chefs who shaped Sichuan’s official banquet style, tracing back to the imperial chef Guan Zheng Xing in 1861. Through apprentices like Lan Guang Jian and the teacher Song Yun Ze, this tradition of refined, balanced dishes has been preserved and reinterpreted for today’s diners.
