The story
Petale De Sakura in Yokohama builds its Yakuzen French approach around ingredients that arrive straight from regional soil. Owner and executive chef Hideyuki Nami opened the establishment in December 2014 after extensive training across Parisian three-star kitchens and a four-year tenure managing Mikuni Yokohama. His culinary foundation rests heavily on the terroir principles he absorbed while working as a live-in chef under Patrick Jeffroy at the two-star L’hôtel de Carantec in Brittany. This commitment to agricultural integrity recently earned the venue a single radish distinction from the We're Smart Green Guide for 2026.
The daily rhythm begins well before the stove heats up. Nami travels to more than forty domestic producers each morning to assess weather conditions and harvest crops by hand. He notes that even carrots display unique color gradients depending on the day’s wind and temperature, which dictates how the kitchen prepares each component. This hands-on sourcing method transforms standard French techniques into a Yakuzen French practice that prioritizes the original character of every vegetable and herb.
