Restaurant Salt in Yono presents refined fusion cuisine anchored by Chef Ken Inoue's extensive background. Inoue launched his cooking career at thirty after years as a record collector, eventually training for eight years under Yuhiro Narisawa at Les Créations de NARISAWA. His approach combines this high-level French foundation with a respect for local Saitama ingredients, a method recognized by a score of 15 from Gault&Millau. He opened the venue in 2019, bringing together his culinary history and personal taste in music.

Sourcing and Flavor

The kitchen builds its menus around produce and meats sourced from suppliers across Saitama Prefecture. Seafood arrives directly from the Karatsu fishery, allowing Inoue to apply restrained seasoning that highlights each ingredient's natural potential. Guests experience this commitment to quality through tasting courses priced at 8,800 yen for lunch and 17,600 yen for dinner, which showcase the chef's approach to fusion cuisine. The kitchen maintains a disciplined preparation style, ensuring the raw materials retain their distinctive character throughout the meal.
