The story

Salitre: Alta Cocina Gallega in A Coruña – Michelin Recommended

Salitre: Galician Cuisine Facing the Atlantic

On A Coruña’s Paseo Marítimo, Salitre presents a refined yet approachable expression of Spanish cuisine rooted in Galician tradition. The dining room opens onto the Atlantic, where the ocean becomes both a view and a source of inspiration. Here, chef Caco Agrasar focuses on pure, market-driven cooking: fish, shellfish, and rice dishes that honor the ingredients without unnecessary adornment.

From Barizo to the City

Salitre opened in 2019 as a city counterpart to As Garzas, the chef’s Michelin-starred restaurant in Barizo. The same philosophy of excellence and respect for the product carries over, but in a more accessible setting. The kitchen works with exceptional local produce, letting the quality of each component speak. The result is a cuisine described as an “ode to our origins” – honest, direct, and deeply tied to the Galician coastline.

A Michelin-Recognised Address

This commitment to craft and clarity earned Salitre a spot in the Michelin Guide, which notes its “pure flavour of Galician product” and the “unforgettable moments” created by the sea views. It is a place where tradition meets a contemporary touch, and where every dish reflects a steady hand and a deep knowledge of the region’s pantry.
