Wildenmann Buonas sits in a three-hundred-year-old inn where chef Dominic Bürli leads a dedicated Swiss cuisine kitchen. Trained by his father alongside veteran Nik Gygax, the Jeune Restaurateur earned sixteen points in the latest Gault Millau guide for his disciplined approach to contemporary Swiss cooking. He runs the pass with three apprentices and relies on direct relationships with local suppliers. Daily catches arrive from professional fisher Theo Zimmermann to anchor the seasonal menu.

Standout Dishes

The tasting menu opens with Kaltes Rossini, layering rare beef tartare with pan-fried duck liver, black truffles, and a warm house-made brioche. A South African langustine arrives alongside a rich lobster soup base boiled from ten kilograms of shells. Apprentice creations also earn permanent spots, such as the crisp veal breast served with red curry and Thai eggplant. Every course reflects a straightforward respect for quality ingredients rather than unnecessary complexity.

Room and Atmosphere

Family members shape the daily rhythm behind the dining room. Amira Aeschlimann manages guest interactions after completing her hospitality training while founder Erica Bürli still appears nearly every day. Large windows face the water and open onto a shaded terrace dotted with mature chestnut trees. The wine cellar holds Bordeaux vintages chosen by Beat Bürli alongside rotating regional labels that complement the Swiss culinary offerings.
