The story
On the Plaza Mayor of Aínsa, a medieval stone village in the Spanish Pyrenees, Callizo brings mountain cuisine to a Michelin-star level. The restaurant’s philosophy is rooted in the surrounding landscape: the Sobrarbe region, with its forests, rivers, and pastures, supplies the kitchen with ingredients that change with the seasons.
Callizo’s approach is quietly confident. The team prefers not to reveal every detail of the menu in advance, believing that each dish should be a discovery at the table. Guests choose between two tasting experiences: the Menú Tierra (€130), a lighter journey through the essence of Pyrenean cooking, and the Menú Piedras (€150), a longer, more complete exploration that the restaurant describes as “a true gastronomic journey through the Pyrenees.” Both menus weave together local produce, traditional techniques, and a clear sense of place.
The dining room, with its modern yet warm aesthetic, sits in a historic building on the square. Service is attentive but unhurried, designed for those who want to linger over a meal that reflects both the richness of the territory and the precision of a Michelin-starred kitchen.
Callizo also offers a children’s menu (€35) for guests under twelve, so families can share the experience without compromising on quality. The restaurant is open for dinner and lunch on select days, with a tasting-menu-only format that encourages guests to surrender to the chef’s vision.
