The story
Asador Concepción opened its doors on 23 March 1994, when Antonio and Ana brought their experience from Pozo Cañada to the centre of Albacete. Today the third generation of the Rosendo family continues the tradition, running the restaurant with the same dedication to hospitality that has defined the business from the start. The restaurant’s consistent quality has earned it a place among the city’s culinary references, and in 2026 it was recognised with a Michelin Recommendation.
The family places raw ingredients at the heart of everything they do. “La materia prima es uno de los pilares principales para nosotros,” they explain, alongside perseverance and a warm, personal approach to every guest. The team is driven by a passion for gastronomy and a belief in constant learning. “Hemos conseguido que nuestra cocina conecte con los comensales y transmita las mismas emociones que nosotros sentimos al crearla,” they say. Every product is worked to bring out its best version, with careful attention to detail.
The restaurant offers several settings: a formal dining room, a private area for special occasions, and a lively bar where guests can enjoy a more casual experience. In warm weather, outdoor seating is available. The bar also features a rotating “tapa del mes,” making it a spot for regulars to discover new flavours. The atmosphere is described as familiar and warm, with an elegant yet unpretentious presentation that lets the ingredients speak.
The menu is built around sophisticated Manchegan cuisine, blending traditional recipes with contemporary touches. Starters include vegetable spring rolls, crispy foie with boletus, artichokes with gulas, and tuna with coffee reduction. Among the main courses, the grilled beef chuletón is a classic – a testament to the restaurant’s focus on high-quality meats. The kitchen also prepares a range of seafood, spoon dishes (platos de cuchara), and homemade desserts such as apple tart. A selection of “minis” offers smaller bites like mini sandwiches and burgers, keeping the essence of the restaurant’s flavours.
Asador Concepción maintains an extensive wine list featuring national and international labels, with a strong emphasis on D.O. Castilla La Mancha, Ribera del Duero, and Rioja. The team considers the pairing as important as the food itself and is happy to recommend a bottle to complement the meal.
