At Restaurante Almocadén in Alcaudete, Jaén, gastronomy is understood as an interdisciplinary activity. Chef Tomás Rueda leads this approach, transforming humble, local ingredients into dishes that dignify the region’s culinary heritage.
The restaurant offers three distinct spaces. The bar area, just inside the entrance, is ideal for an aperitif. The main dining room provides a comfortable setting for a full meal or the tasting menu. In warmer months, the terrace becomes a sought-after spot for enjoying dinner under the open sky.
Almocadén’s contemporary Andalusian cuisine is rooted in the landscape of Jaén. The menu evolves with the market, but the kitchen excels at elevating traditional preparations: wild game, stews, and legumes are treated with precision. A recent seasonal recommendation includes a royal hare preparation with truffled potato and brioche with its own pâté. Another standout is the onion with eel and a beurre noisette escabeche. Desserts are house-made, such as the aniseed porridge foam with candied nuts and rosemary honey ice cream. An eight-course tasting menu offers a broader journey through the kitchen’s skills.
Almocadén has earned a Sol Repsol and is listed as a Michelin Recommended restaurant for 2026, a testament to Chef Rueda’s role in dignifying the rustic, survival-driven cooking of the Andalusian countryside. The wine cellar is also a point of pride, with selections like the Pinot Noir from Alta Pavina.
