The story
Koiné Bistró in Alicante is a kitchen that speaks of two places: Andalusia and the Mediterranean. The name itself – Koiné – evokes a shared language, and the menu is built from the flavours, aromas and techniques chef Juanlu Parra gathered during years of travel and work in top-tier restaurants.
A native of Jaén who now calls Alicante home, Parra trained under Dani García at the three-Michelin-starred Dani García, later leading research and development for the group. He helped open Bibo Tarifa, Lobito de Mar and Leña before returning to the Terreta to launch his own project. At Koiné, he is both director and executive chef, bringing a refined, personal style to the Andalusian and Mediterranean cuisine he grew up with.
The restaurant sits on Calle Bazán in the centre of Alicante, within walking distance of the Mercado Central, the Explanada de España and the port. The space is air-conditioned, with outdoor seating for warmer months. Open for lunch and dinner from Wednesday to Sunday, it has earned a Michelin Recommended distinction for 2026 – a sign that this careful, rooted cooking is already making its mark.
Koiné’s food is not about reinvention for its own sake. It is about honouring the traditions of the south and the coast, filtered through a chef’s curiosity and precision. The result is a bistro that feels both local and quietly ambitious – exactly what the name promises.
