The story
For nearly 75 years, Mesón de Pincelín has been a cornerstone of dining in Almansa, Spain. Today, the third generation of the Blanco family—brother and sister Diego and María Ángeles—carries the legacy forward with a blend of deep-rooted tradition and a contemporary vision. Their work has earned the restaurant a Michelin Recommended distinction, a testament to their unwavering commitment to quality.
Chef and co-owner Diego Blanco grew up in the family business. He began working as a waiter at 16, spending 14 years learning the rhythms of the dining room before deciding to cross through the kitchen door at age 30. His formal culinary training began in Toledo under the renowned chef Adolfo Muñoz, followed by stints in restaurants across Castilla-La Mancha and beyond. This journey shaped a cooking style defined by absolute respect for the product, flavor as the central axis, and a modern interpretation of Manchegan tradition.
His sister, María Ángeles Blanco, is the co-owner and head of the dining room. After studying Business Sciences at the University of Alicante, she specialized with a Master’s in Gastronomic Management and Innovation in Madrid. Her experience in top Madrid restaurants informs her approach to service: meticulous, warm, and intuitive. She leads the front-of-house team with the goal of turning every visit into a memorable experience.
