Chef Ginés Peregrín’s story is one of growth and return. An Almeriense by birth, he spent nine formative years cooking in the Netherlands, a cosmopolitan period that shaped his approach to food. He worked alongside passionate, exacting chefs, learning to experiment and reinterpret dishes from around the world. That experience now fuels his own kitchen, where he blends the traditions of Mediterranean cuisine with influences from Mexico, Peru, Asia, and beyond.
This contemporary cooking is rooted in an obsession with freshness and an explosion of flavour. The chef’s commitment to local, seasonal produce is absolute: fish comes straight from the boat, and vegetables travel from the nearby greenhouses to the worktable with respect and care. Every element of the ingredient is used, applying both traditional and avant-garde techniques.
The menu is offered through several tasting options. The “Costa de la Sal” menu, priced at 74€, is a 100% Almería experience. It showcases dishes like kid goat sweetbreads from the Filabres mountains with a demi-glace, and ajo colorado with ray fish, breva figs, and an Andalusian ajoblanco. A risotto of gurullos pasta features local Serón cheese and red prawn. There is also a 59€ “Sorpresa” (Surprise) tasting menu of five courses, and a “Verde” (Green) tasting menu at the same price, focused on seasonal vegetables and local greens. For a special gift, the “Pasaporte para Dos” offers a complete journey for two with a pairing.
The restaurant’s dedication to craft extends to the table, with artisanal sourdough breads made daily by their own baker. This thoughtful, personal approach, combined with a clear culinary vision, has earned Ginés Peregrín a Michelin Recommended award for 2026, marking it as a destination for contemporary cuisine in Almería.
