From Causa Limeña – a creamy potato purée with yellow chilli, prawn salad and avocado – to a bold Tiradito of sea bass with tiger’s milk, sweet potato and pickled onion, the menu reads like a love letter to cevicherías. The cooking is confident, the ingredients precise.
The grill section is equally compelling. Here, meats take centre stage: a lacquered pork belly with citrus sauce, a Secreto Iberico with smoked demi-glace and potato millefeuille, or a hefty Chuletón of Rubia Gallega – all served with crispy fries and blistered Padrón peppers. The quality of the beef is front and centre, and the kitchen lets it speak.
VIVO Gourmet has earned a Michelin Recommended distinction, a nod to its consistent execution and the clear personality of its cooking. The atmosphere is contemporary and welcoming – air-conditioned inside, with outdoor seating for warmer evenings. The dining room works for both a leisurely dinner and a focused meal around the grill.
With a wine list that reaches from a Tokaji 5 Puttonyos to a Sauternes and a Don PX from Córdoba, the pairings are thoughtful. Desserts follow the same logic: a Basque-style cheesecake, a vanilla namelaka with red berries, or a lucuma foam with Tonka bean ice cream – each one a finish as deliberate as the start.
