The story
For more than fifteen years, Aires de Doñana has been bringing the traditional flavours of the Doñana region to the table. The kitchen respects ancestral recipes while adding a subtle, contemporary touch — never losing sight of the quality and origin of each ingredient. “All of our ingredients are taken directly from the heart of Doñana,” the team explains. Local products such as mostrenca beef, wildflower honey and seafood from the nearby coast define a menu that is deeply rooted in the landscape.
The restaurant’s commitment to this authentic Spanish cuisine has earned it a Michelin Recommendation for 2026, a recognition that underscores the care taken in every detail.
Aires de Doñana faces the Doñana National Park, offering one of the most striking backdrops in the region. From the dining room or the terrace, guests watch flamingos, mallards, marsh horses and mostrenca cows pass by in the distance. The Ermita del Rocío reflects in the dark waters of the marsh at night, creating a scene that feels inseparable from the meal itself.
The atmosphere is relaxed and welcoming, equally suited for a long lunch, a quiet dinner, or a private celebration. The restaurant also welcomes larger events, making the most of its privileged location at the edge of the park.
