In the quiet Basque countryside of Amorebieta, Jauregibarria brings together three distinct dining experiences under one roof: a gastronomic dining room, a bistro, and a traditional tavern. The Menú ERRO (€65) is a seasonal journey through the most traditional Basque cooking, built around the best produce of the moment. It begins with an artisan butter of the season and a croqueta of small game, then moves through a tomato infusion, foie gras with apricot purée and mustard caramel, and ecological vegetables from their own Km0 garden, Ibarra Baserria. The meal continues with a selection of the day’s finest fish, lacquered deboned Iberian pork with apple and juniper purée, and a caramelized brioche torrija with ice cream, finished with house-made chocolate bonbons and rice pudding liqueur.
For game lovers, the Menú EHIZA (€90) is a delicately crafted tribute to hunting cuisine. Highlights include a trout with celeriac purée and roe, duck and pigeon bonbons, pickled quail salad with quinoa and garden pickles, wild boar stuffed with roasted red pepper and demi-glace, roasted roe deer with green peppercorn sauce, and a hare terrine with Jerusalem artichoke. The meal closes with chocolate in textures, orange gel, and candied hazelnut, plus petit fours.
