A Family Legacy in the Sierra de Gredos

La Mira de Gredos began as the dream of a young couple, Luis and Inmaculada (Adita), who dedicated their lives to feeding travellers, mountaineers, and fishermen passing through the Sierra de Gredos. Luis sourced the best local ingredients; Adita, self-taught, gave them the perfect touch. Today, their three sons—Luis, César, and Rodrigo—run the restaurant and hotel, keeping the family’s warmth at the heart of the business. Chef César Hinojal Martín, who grew up “between pots and pans,” now leads the kitchen. He trained in cooking schools and worked in Michelin-starred restaurants, but credits his mother as his greatest teacher. In 2026, his work earned La Mira de Gredos a place among the Michelin-recommended restaurants in Ávila, a recognition that speaks to the kitchen’s consistent quality and deep roots in the region.

Cooking from the Land

The menu at La Mira de Gredos is grounded in the produce of Ávila and the surrounding Gredos mountains. The kitchen favours traditional preparations: patatas revolconas with pimentón de la Vera and torreznos, entrecot de ternera de Ávila grilled with pimientos de Padrón, and lomos de bacalao al pilpil. Ingredients are sourced with care—jamón and caña de lomo ibéricos from D.O. Guijuelo, local cheeses, and seasonal vegetables. César admits a weakness for desserts and fish, and the sweet offerings reflect that: arroz con leche cremoso with caramelised pine nuts, or hojaldre de higos del Tiétar. The cooking is direct, generous, and tied to the land.

A Place to Stay and Dine

A comprehensive renovation completed in late 2023 transformed the hotel into a modern, accessible space with ten rooms, many offering terraces and direct garden access. The restaurant continues to serve lunch from Wednesday to Sunday, with evening dining by reservation—particularly for hotel guests. The atmosphere remains that of a family-run establishment where the focus is on good food, the surrounding nature, and genuine hospitality. La Mira de Gredos is, as the family says, in the best travel guides—and its Michelin recommendation for 2026 confirms it.
