High above the coast of Costa Adeje, inside the GF Victoria hotel, Donaire offers a perspective on fine dining that is rare even by Michelin-starred standards. The kitchen is led by chef Jesús Camacho, a pastry chef by training who has built a contemporary cuisine concept around a simple but radical idea: apply the exacting techniques of high-level pastry-making to every course—savory included.
This approach has earned Donaire a Michelin star and a Repsol Sun, placing it among the most distinctive tables in the Canary Islands. As the restaurant describes it, the team works as "a creative laboratory where pastry-making structures the entire kitchen." The logic is rigorous: if every gram matters and every gesture is essential in a dessert, why not in a main course? The result is a menu where texture, balance, and visual clarity are present in every plate, from the first snack to the final sweet.
The tasting menus—named Donaire and Victoria—reflect this philosophy. A savory choux, for example, is a profiterole demanding precise resting time and baking, filled with tuna, red mojo, and peanut praline. Pork belly arrives with a vegetable demi-glace and carrot romesco. The clean aesthetic carries through to the finale, where a dessert of orange, ginger, and strawberry is described as an "ephemeral garden."
Camacho is supported by a young team that includes sous-chef Rubén Pérez, chef José Hernández, sommelier Paula Rojas, and maître Miguel Reyes.
