At Haydée by Víctor Suárez, the cuisine is an homage. Chef Víctor Suárez, a Tenerife native, named the restaurant after his grandmother, who sparked his love for cooking. Her spirit guides a kitchen that transforms the traditions and ingredients of the Canary Islands, especially the island of La Gomera, into a contemporary dining experience. This heartfelt project, which has earned a Michelin star, is built on memory, respect for small producers, and a clear, modern vision.
Located within the iconic Hotel Gran Tacande Wellness & Relax in Costa Adeje, the restaurant offers a remarkable setting. Views stretch over the Playa del Duque and the hotel’s pool, with the island of La Gomera visible on the horizon. This landscape is central to the concept. The team works with local, Km0 ingredients to craft a modern, elegant expression of Canarian cuisine. The approach is one of care and attentiveness, reflecting the very meaning of the name “Haydée”: to respect, to cherish, to pamper.
Haydée offers two tasting menus that explore the archipelago’s identity. The “Atlántico” menu, with 10 courses, captures the pulse of the islands and the sea. The “Raíz” menu, with 15 courses, digs deeper into the landscape and memory of La Gomera, weaving tradition with a forward-looking perspective. Each dish, the chef explains, is born from the origin of a memory and a personal way of understanding the Canary Islands, where tradition and vanguard coexist in balance.
